Join us in this exciting class in making two very popular and beloved pastry treats:
Canelé - A classic French pastry and a staple at many cafes and bakeries, learn how to create the Canelé with its characteristically crunchy caramelised exterior and a rum & vanilla bean flavoured custardy interior.
You will learn:
- how to prepare traditional copper molds with beeswax
- tips and tricks of creating a good Canelé batter (by demonstration)
- tips on how to bake Canelés with home ovens
Cookie Sando - A delicious cookie sablé sandwich filled with a smooth French buttercream and delicious seasonal fillings.
You will learn:
- a light and crispy sablé recipe made with rice flour
- how to make a French butter cream using creme anglaise
- how to assemble the cookie sando with seasonal fillings
Each person will take home 6 Canelés and 9 Cookie Sandos packed in a giftbox.
About Venus
After relocating from Hong Kong to take up residence in Macau, Venus is happy to finally be back at The Mixing Bowl to share with you her new cake and pastry classes! A graduate of the Patisserie Program at Le Cordon Bleu Tokyo and a former intern at Maggie Austin Cake based in Virginia, U.S., Venus has worked at various places in the industry since 2011 to accumulate a variety of skills, including Ms. B’s Cakery and the 3-star Michelin restaurant Robuchon au Dome Macau. Following her most recent stint at Honest Bakery Macau as Head Pastry Chef, Venus is excited to get back into teaching and welcomes students of all levels to come learn and bake with her.
